Simply run your hand along the stem to harvest the leaves.

This special plant is extremely rich in vitamins, minerals, proteins, and omegas. Due to being so nutrient dense, it is cultivated in almost corner  of the world. A single plant of Lambs Quarters can produce 70,000 - 120,000 seeds, but once collected those same seeds can be turned into a flour or cereal. The name comes from an English festival held in August to celebrate the first harvest in the year. The taste of this green bears a resemblance to Spinach.
